Fish casserole

Ingredients

1 1/4 kg Fish – sea bass, red snapper or any medium size firm fish
1 head Garlic – chopped     
3/4 cup Parsley – chopped     
1/2 kg Tomatoes – ripe     
1 tbsp Tomato Paste     
4 tbsp Lemon Juice     
1 cup Corn Oil Afia     
2-3 Onions – large size, sliced     
Salt and Pepper

Directions
1.Wash fish well. If you prefer, cut each fish in half. Add lemon juice to fish and set aside for 1 hour.
2.Blend tomatoes in a blender or food processor or dissolve tomato paste in a cup of water.
3.In a medium pan, heat oil over medium high heat. Add onions and stir until golden brown. Add vinegar and blended tomatoes. Add garlic, آ½ cup parsley, salt and pepper.
4.Add آ½ -1 cup water, reduce heat and simmer for about 20 minutes.
5.Add fish to pan, cover and simmer for another 15-20 minutes until very little sauce remains in pan. Move to a serving dish and sprinkle remaining parsley. Serve immediately.
You can bake the fish instead of cooking it over the stove. Put fish in a baking dish, prepare sauce as stated then add it over fish and bake in oven (200 C) for about 20-25 minutes until fish is tender and little sauce remains.
