Fish with tomato sauce

Ingredients

1 kg Fish Fillet
1 Green Pepper – large size     
1/3 cup Tomato Paste     
2 tbsp Garlic – finely chopped     
2 Onions – medium size     
1/4 cup Black Olives – seeded and cut into halves     
1/2 cup Lemon Juice     
2 tbsp Corn Oil Afia     
Salt and Pepper

Directions
1.Wash fish well. Put fish in a baking dish and season with lemon juice, salt and pepper. Leave for 1 hour.
2.Cut onions into slices then cut slices into halves. Cut pepper into thin sticks.
3.In a small non-stick skillet heat oil over medium heat. Add onion, pepper and garlic. Cook and stir occasionally for 2 minutes until crispy-tender.
4.Add 1 cup water, tomato paste and olives and bring to boil.
5. Pour sauce to cover fish in the baking dish. Place in oven for 30-35 minutes in a medium-high heat oven until tender. Serve immediately.
