Potato salad (2)


3 Potatoes – medium size
2 tsp Garlic – crushed     
1/2 cup Parsley – chopped     
3 tbsp Olive Oil – or corn oil     
1/2 cup Coriander – chopped     
3 tsp Cumin     
Salt and Pepper

1.Boil potatoes, unpeeled, until tender (about 20 minutes). Drain and leave to cool.
2.Peel potatoes and cut into bite size cubes. Put in a medium bowl.
3.Add chopped parsley and coriander. Season with salt, pepper and cumin.
4.In a small pan, heat oil over medium heat. Add garlic stirring constantly for about 10-15 seconds. Pour oil with garlic onto potatoes in bowl.
5.Stir all ingredients together and adjust seasoning. Serve right away or refrigerate.
